2 cups grated coconut
In a saucepan bring the coconut and water to a boil. Add the brown sugar and stir well. Cook on low for about 30 minutes. Stir occasionally.
When the mixture begins to harden add the vanilla and stir well. Cook another few minutes until it gets very sticky.
Drop by tablespoons onto a greased cookie sheet. Let the candy cool completely. This recipe makes approximately 15 pieces.
|Many people in Puerto Rico have banana trees in their backyards. Bananas must be cut down while green and unripe otherwise they develop a bad taste. Plantains look just like bananas but are larger and thicker, and have a different flavor. Plantains and bananas are prepared either green or ripened.|
|Guavas or guayabas are a favorite fruit in the island. They are eaten ripe when the fruit is yellow. Try guava jelly on toast for breakfast. Yum!||
1 egg yolk
Using an electric hand mixer beat the egg yolk into the sugar until creamy and almost white. Add cold Malta and blend well.
2 green plantains
First, the plantains have to be peeled. Cut off both ends of the plantain. Make a lengthwise slit on the skin. Using the tip of a dull knife pry the skin off by sliding the tip of the knife into the slit and pushing the peel away from the plantain. Wash the plantains after peeling.
Using the slicer end of a metal grater slice the plantains into think slices. Your hands will now be kind of sticky. Wash them using a little water, soap, and salt. The salt helps to take what Puerto Ricans call "mancha de plátano" off.
Fry the plantain slices over medium heat until golden brown. Remove from the oil and place over paper towels to soak up any excess oil. Sprinkle with garlic salt.
Freeze any kind of juice in an ice-cube tray. In Puerto Rico the favorite flavors are coconut, and guava.
Mangoes can be eaten skin and all.
