Mojo de Ajo
(garlic sauce)

1 cup olive oil
8 teaspoons crushed fresh garlic
salt & pepper

* Slice or mash garlic and cook in oil over low heat for about 20 minutes or so, making sure it does not burn. Make it at least one day ahead for richer flavor. Cover and refrigerate. (Some people run this thru a blender). It is garlic gold.....
