Boiled Yellow Breakfast Plantains

Peel and slice ripened plantains into 2 inch chunks. Boil in salt water until cooked. Place in a cereal bowl. Slightly mash the plantains and add fresh milk. (A jíbaro favorite)

Fried Breakfast Plantains

Peel and slice ripened plantain in half. Slice each half lengthwise into 4 slices each. Fry each slice until tender and brown. Serve with "over easy" eggs. (A Puerto Rican favorite)
